Extra virgin, cold-pressed, crafted from ancestral Corsican olive varieties
At Clos Canarelli, olive oil production follows the same pursuit of excellence as our wines. Every step, from planting to pressing, is guided by respect for the fruit and Corsican tradition.
The Olive Grove
A Corsican tradition holds that a tree should be planted when a first child is born. In 1997, at the birth of his son, Yves Canarelli planted an olive grove of two thousand trees. The grove includes three local olive varieties: Ghjermana, Sabina and Zinzale.
In 2008, upon the birth of his second child, Yves took over the cultivation of a three-hundred-year-old olive grove located in the mountains of Alta Rocca.
The Olive Oil
The olive oil is produced with the same commitment to quality, respect for nature and pursuit of excellence. The olives are harvested by hand at the turning stage, when their colour shifts between green and black. They are then cold-pressed within twenty-four hours to achieve the finest results.
Produced from different olive varieties, the oil reveals notes of artichoke and fresh herbs, with a balanced bitterness and pleasant peppery finish.
It has been marketed since 2016 and is available in three bottle sizes: 20 cl, 50 cl and 75 cl.
The Olive Mill
Operating since 2016, the mill uses modern techniques that fully respect the fruit.
The olives are carefully stripped of their leaves so that only the fruit remains, preserving all aromatic qualities. The result is an exceptionally delicate and refined extra virgin olive oil.
